Low-sugar pancakes? Turns out they're not for me and my boys – Hayley Matthews

I've been trying to get my jelly belly down a bit after stuffing my face all the way throughout lockdown.

It's the lack of walking too that's piled on a few stone but I'm not getting too down about it as it's very insignificant considering the other tragedies going on right now.

However, saying that, my poor wee knees are feeling the extra pounds so cutting out the sugar has been something I've been attempting.

I haven't necessarily been successful at it but I've been trying different alternatives. I've tried cutting down on alcohol too but let's not get too carried away!

So after seeing a pancake mix with less carbs and sugar I decided I'd make some for the boys (and me) in preparation for pancake day. I heated the pan, skimmed the instructions (I mean how hard can pancakes be?) and set up the electric hand whisk.

Fifteen minutes of mixing and the bowl of ingredients still resembles a pile of spew you'd find on the Royal Mile after a night out, on your way home.

It was very lumpy but I thought I'd try and make something of the mixture anyways. I can only describe what happened as a dog’s dinner.

It all stuck together and ended up, as number-one son commented as he dry boaked, like "burnt scrambled eggs!" Number-two son had a bite, then threw it at me.

So safe to say my low-sugar pancake experiment failed because even the birds wouldn't eat it!

Stick to what you know cause life's too short not to eat the pancakes and if it ain't broke don't fix it!
