Wendy Stubbs (40)set up a JustGiving page to raise money to provide food for staff working in the Intensive Care Unit (ICU) in Edinburgh Royal Infirmary (ERI). As well as raising cash, Wendy has also been co-ordinating food donations to hospital staff from local businesses.

She said: “Three of my friends work at the hospital and so I thought of ways to help them. I thought I can’t just send in food for them, so it’s for the whole team.

“I think we all know that over the next while their job is only going to get harder.

“I raised funds for the first delivery by asking close family and friends. The response was so positive I decided to set up the JustGiving page.

“It’s one less thing for the hospital staff to worry about and it gives them more time to do their job, not having to go out for food.

“It’s quite good as I feel like I’m doing something to help them. We are all currently in our houses feeling helpless.

“I’m doing this all over the phone, arranging deliveries and raising money. I had to pick up breakfast goodies from Asda and drop them at the hospital but I didn’t even have to leave my car.”

Wendy has been delighted with the kind response from local businesses, particularly from Dalkeith Indian restaurant Itihaas. She said: “When I contacted Matin (Khan) at Itihaas he agreed to deliver the meals and then later he called back to say he would do it for free! I was completely gobsmacked by his generosity and kindness.

“This means that I can use the money raised for buying more food items.

“Itihaas has been providing food to the ICU at ERI every Thursday free of charge. Matin has provided over 1200 meals to people in the NHS, police, the fire service, care homes, GPs and pharmacies.

“I have also delivered breakfast food items that I arranged with ASDA.

“And there was 40 wholesome meals delivered on Monday by Thistles Cafe in Edinburgh. They are also going to make free caramel shortbread.”
